Sushi Bar' takes a modern approach to Japanese cuisine.On the opposite side the expert Chef prepares his delicate delights beforethe admiring gaze of the assembled guests. The daily fish selection is ondisplay to the right of the Chef while behind him their smaller cousins swimabout in the blue aquarium. A large paper sculpture floats above the barprojecting swirling, calligraphic shadows on the mint-green wall.One side of the space is glazed, allowing daylight to wash the space in themornings and also offering a view of the ornate surrounding buildings. Thecolourful Sushi and Sashimi dishes arrive at your table as artfulcompositions on a simple, square wooden platter. Needless to say the Cheftakes his Sushi very seriously. A quick glance around the room confirms thecredentials of the restaurant- several of the guests are Japanese.
